Borage

Blue, star-shaped flowers with spiky leaves. They can grow large for an indoor plant, but they’re manageable.

Using it

The flavour of the flowers themselves resembles cucumber and add a nice contrasting colour to dishes.

Young leaves can also be eaten, but don’t eat the older leaves, as they are way too spiky to be pleasant.

Growing notes

Like with my wild violets, I start these in a seed tray close to the grow lights to avoid leggy seedlings. Once they’ve got a few leaves, I transplant them into pots. Two plants in a single 15cm pot seem to work well, smaller pots seem to dry out too quickly. They are quite large plants, and mine don’t flower until they’re around 30cm tall and usually reach around 50cm by the time they’re done.

The first flowers appear after around 6-8 weeks. They keep flowering for at least 4 weeks after that.
