Pine cone jam

I bought 500g of scots pine cones from Coeur Sauvage, and one of the things I wanted to do was attempt to make a pine cone jam. Scots pine cones don’t seem to be entirely green when they’re big enough to be useful, but the woody parts don’t seem to affect the flavour of the final product.

I mixed 1 part cone, 1 part sugar, and 1.5 parts water.

After simmering for about an hour, the pines had become soft and I put it in a jar.

I was expecting it to become a little darker, not sure if it’s related to the variety. Next time will potentially flavour with spices.

With the finished product, I’ve used both the syrup as well as the pine cones. The pine cones themselves can be a little intense and are much nicer being chopped up. They’re great as a topping on yoghurt with berries.
