Water mint syrup and latte menta

Last weekend I went for a walk along the River Chess and found an area with a large patch of water mint. I was expecting to find it in small clusters, but there were a lot of large patches in a small part of the stream. I precariously perched myself along the bank and took some nicer looking leaves.

I used the method I always use with mint syrup: blanch the leaves, chill them in ice water, blend with a 2:1 sugar syrup. It produces an intensely green syrup with a strong mint flavour.
The syrup had more menthol notes compared to a normal mint syrup, it tasted great. I used it to make an oat latte menta, which was perfect in warm weather.
